Mmmmmm bacon. Is there anyone out there that doesn’t like bacon? Well, unless you are a vegetarian, I get that bacon is off limits for you, but for my meat eaters, who doesn’t drool when they smell the sizzle of bacon?

I do love the smell of bacon, but what I don’t love is its lingering affects in the kitchen, family room, dining room, my clothes, my hair…I could go on and on, but I think you get the point. So what to do, what to do?

There is a great hack to get that crispy bacon deliciousness without its smell infiltrating every corner of your home. I present to you our work horse cooking machine, the Weber grill. Yes you heard me right I said grill. Cooking bacon on the grill gives you that signature crunch and texture while keeping those aromas outside of the house. However, you may have every neighbor and dog within a 2 mile radius drooling for some bacon, but I don’t thing that’s necessarily a bad thing, is it? Spread that bacon love I say.

Since bacon is the only thing that requires cooking, this meal is super simple and comes together fast. It’s a perfect mid-week dinner for when you’ve had a long day and don’t want to fuss in the kitchen, but still want to eat something yummy. Now onto the recipe!

Ingredients:

1 package of Butcher Box bacon

Tomatoes sliced thick

Lettuce tear leaves off and tear in half

Avocado sliced thinly.

Mayonnaise (I use Sir Kensington’s mayo, its the bomb!)

Heat the grill and get the sides hot. Once to temperature lay bacon directly across the grates but away from the direct heat. Turn bacon after one minute and continue to cook and turn every minute until cooked through. Cooking time depends on the fat and thickness of bacon so continue to cook until it appears done but not overburnt. Pull off grill and place on paper lined plate to soak up some of the fat. Toast sourdough bread and spread both sides with mayonnaise. Top with bacon, tomatoes, lettuce, and avocado. Slice sandwich in half and try not to devour that bacon goodness!

This dish can also be made for breakfast by replacing the lettuce for a fried egg. I’ve been on a savory kick for breakfast lately and have made this, or a version of this sandwich, for the past three weekends.

Wine to pair?

The bacon just calls to my favorite delicate grape, Pinot Noir. I would go with a Pinot Noir that’s on the lighter side with some fruit forward notes.
