Creamy Dreamy Chicken Dish

I usually try to cook most of our meals relatively healthy. I use extra virgin olive oil as my cooking fat, go sparingly with sauces, add tons of veggies, and make light and bright meals. That being said, sometimes all I crave is something rich, creamy and downright decadent! On days like these I turn to a cream sauce, because if you’re going to be bad you might as well go all the way!

I also love chicken because of its versatility and ability to take on whatever flavor palate you’re shooting for. I don’t know why chicken gets a bad rap as a boring protein; it’s my go to meat when I’m having a hard time deciding what to make and is perfect for comfort dishes.

I decided on a cream sauce for this sinful specialty and it hit the spot! I also added some cherry tomatoes, fresh spinach, and onions, so really it isn’t THAT bad for you, right? Now let’s stop talking and start cooking!

Ingredients:

4 chicken breasts

1 pint of cherry tomatoes

8 oz. bag of fresh spinach

1/2 large yellow onion

2 garlic cloves minced

1/2 bunch fresh Italian parsley

3/4 – 1 cup of heavy cream

3 tablespoons of butter

Heat a skillet over medium high heat. Salt and pepper both sides of the chicken breast. Melt 2 tablespoons of butter in skillet and add the chicken breast. Sear them on both sides for 4 minutes each. When flipped over sprinkle half of the parsley on top of breasts. Remove chicken from pan and place on plate. Add remaining butter to pan and sauté garlic, onions, and cherry tomatoes until onions become translucent. Put chicken back into pan and add the cream. Bring to a boil and then reduce to a simmer for about 5-10 minutes until chicken is cooked through. Plate over rice or pasta and garnish with remaining parsley.

Wine to pair?

You know me and my love of pinot, but I’m going to go a different direction this time (shocker, I know!). A chardonnay is a great pair to this dish. Personally I go with a Burgundian White since I’m not a fan of the overly oaked or buttery chard, but if that’s your jam, pair away! So throw caution to the wind, ignore counting calories, and dig into this creamy dreamy dish, because you only live once anyway!
